First two pours control sweetness, last three control strength.
Use water at about 95-100°C. Grind size: medium-fine for V60, medium for Chemex and Kalita. Times in the table are when each pour begins, totals are cumulative.

Why so many recipes?+
Different brewers and grinds favor different recipes. Tetsu's 4:6 lets you tune sweetness vs strength. James Hoffmann's is bulletproof for medium roasts. Chemex needs slower pours.
