Does coffee or tea count?+

Yes, mostly. Caffeinated drinks are mildly diuretic but the net hydration is positive. Plain water is still ideal but everything liquid contributes.

Can you drink too much?+

Yes, though it's rare. Hyponatremia happens at extreme intakes (gallons in a few hours). For normal life, listen to thirst.
